Recipe : bean sauce and vege-cake
Firstly start the bean sauce the night before . 1.) Soak black eyed peas / beans in water with two pinches of bi-carb soda .
2.) The morning after , squeeze the peels off the beans . It doesn't matter if you mash the beans while doing this , this helps smoothen the texture of the sauce . Use the soaking liquid to rinse the peels away and throw them in the compost .
3.) Boil the beans on very low heat until very soft and gluggy . You may have to add extra water to boil the beans .
4.) Remove excess cooking liquid from the beans and add diced tomatoes from a can or jar , salt and oil . Boil until tomatoes are cooked . This is the sauce , to be served hot .
To make the cakes :
1.) Grate a large Idaho potatoe . Put in to a large mixing bowl .
2.) Add frozen mixed veges from a packet which you may buy at the super market .
3.) Add two ladel - fulls of plain flour
4.) Add a pinch of salt .
5.) Add 300 mL of water and mix , getting the lumps out .
6.) Put the whole batter into deep oil in a large deep fryer . The setting of the fryer should be about less than half of full power .
7.) Turn the cake over when firm enough . When you turn the cake is about 80 % cooked .
8.) Take the cooked cake from the oil and put on to a plate to cool .
9.) Cut the flat vege - cake in to slices / triangles and serve with the dipping sauce .
